Tasting Notes

The Story
Black Pearl is a Crémant de Bordeaux from Maison Célène, the former house of Ballarin, sparkling specialists in Haux since 1947. Three generations of Ballarins built the house, and Jean-Louis even helped create the Crémant de Bordeaux appellation in the 1990s. Made in the traditional method, the wine rests at least a year in eighteenth-century quarries carved into the limestone above the Garonne, where a steady 13°C coaxes out its fine, persistent bubbles. After disgorging it is finished with a touch of bourbon, a quiet signature that sets it apart.
