
THE FAMILY BEHIND THE WINE
Maison Célène has been making fine bubbles in Haux, in the heart of Entre-Deux-Mers, since 1947. Founded by the Ballarin family, three generations built the house, and Jean-Louis Ballarin helped create the Crémant de Bordeaux appellation in the 1990s. The wines age in eighteenth-century quarries carved into the limestone above the Garonne, where a constant 13°C gives the crémants their fine, persistent bubbles. Since 2015 the house has been part of the Lannoye family vineyards.
